We use Semolina #1 Durum Wheat, which is the heart of the wheat, adding only artesian well water, the finest naturally filtered water on earth - Nothing else!  The genetic makeup of Fresina's Whole Wheat Pasta is a nutritious and delicious way to meet the six to eleven daily servings of grain products suggested by the U.S. Government Dietary Guidelines as well as a significant source of dietary fiber and protein. In contrast to most commercially made "grainy, cardboard tasting" whole wheat pastas, our whole wheat is tender, with a deliciously distinct nutty flavor.

 Spelt is a distant cousin to modern wheat and is one of the oldest grains known to man, which is estimated to be over 6000 years old. Some of the earliest recordings of spelt appear in the Bible (Ex. 9:32, Is. 28:25, Ez. 4:9). Spelt has a mild nutty flavor, which makes it a favorite in whole grain bread. The breads of Tuscany Province in Italy are made from spelt, which the Italians call "farro" (from where we get the word farina). Many people with wheat allergies have found spelt to be a viable alternative. Another important benefit is that some gluten sensitive people have been able to include spelt in their diets. Spelt has a unique makeup and nutrition profile that produces a high water solubility, allowing the nutrients to be easily absorbed by the body. This product is an excellent fiber and protein resource, and has large amounts of B complex vitamins.

As with all our pastas, we begin with all natural ingredients. Spinach is all natural dehydrated spinach, and our Beet comes from all natural dehydrated beets. The dehydrated powders are proportionally mixed with Semolina # 1 for texture and come in two shapes ~ Fettuccini & Rotini. Color combinations consist of various colored pastas combined with our golden pasta. Beet (purple) & Gold represent our “Tiger Pasta” (Louisiana State University colors) and Beet, Spinach & Gold represents our “Mardi Gras Pasta”. Don’t be surprised if you see Tomato pasta on the horizon (a red, gold and green combination just seems like something we should do). It’s for sure that no matter which variety of Fresina pasta you choose, it will be the best tasting pasta you will ever buy.
